2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
Set this bowl aside for later.
Combine the Wet Ingredients
In a medium bowl, beat 2 large eggs until smooth.
Add the following and mix well:
1/2 cup vegetable oil (or melted coconut oil)
3/4 cup granulated sugar
1 teaspoon vanilla extract
2 ripe bananas, mashed (about 1 cup)
1 cup grated zucchini (lightly pressed to remove excess moisture)
Bring It All Together
Gradually add the wet mixture to the dry ingredients, folding gently with a spatula. Avoid overmixing to keep the bread light and tender.
If desired, fold in optional add-ins like:
1/2 cup chopped walnuts or pecans
1/2 cup chocolate chips
Bake to Perfection
Pour the batter evenly into the prepared loaf pan, smoothing the top with a spatula.
Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
Cool and Enjoy
Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
