Preheat & Prep
Preheat your oven to 350°F (175°C). This ensures your oven is hot and ready to bake your bread perfectly.
Line your 9x5-inch loaf pan with parchment paper or lightly grease it with nonstick spray to prevent sticking.
Mix the Dry Ingredients
In a large bowl, whisk together:
2 ½ cups bread flour
1 ½ teaspoons baking powder
½ teaspoon baking soda
1 teaspoon salt
Stir these ingredients until everything is evenly mixed. The combination of baking powder and baking soda will give the bread a light, airy texture.
Mix the Wet Ingredients
In another bowl, combine:
1 cup cottage cheese
2 large eggs
¼ cup melted butter
¼ cup honey (or sugar)
½ cup milk (or buttermilk)
1 teaspoon apple cider vinegar
Use a whisk to blend everything together until smooth. The cottage cheese adds moisture and a rich, tender crumb to the bread.
Combine Wet & Dry Ingredients
Pour the wet mixture into the dry ingredients.
Gently fold with a spatula until just combined. Be careful not to overmix—the dough should be thick but still slightly sticky.
Shape & Bake
Pour the dough into the prepared loaf pan. Use your spatula to smooth the top for an even bake.
Place the pan in the oven and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
Cool & Enjoy
Once baked, remove the bread from the oven and let it cool in the pan for about 10 minutes.
Transfer it to a wire rack to cool completely. This prevents the bread from getting soggy and helps maintain its fluffy texture.
