  • For the Cinnamon Swirl:
  • 50 g ¼ cup brown sugar – Adds a deep, caramelized sweetness to the filling.

  • Prep Your Oven & Pan
  • Preheat your oven to 350°F (175°C).
  • Line a 9x5-inch loaf pan with parchment paper or lightly coat it with non-stick spray to prevent sticking.
  • Mix the Dry Ingredients
  • In a large mixing bowl, whisk together:
  • Oat flour
  • Protein powder
  • Baking powder & baking soda
  • Cinnamon, nutmeg, and salt
  • This step ensures even distribution and prevents clumps in your batter.
  • Combine the Wet Ingredients
  • In a separate bowl, whisk together:
  • Pumpkin puree (for moisture and flavor)
  • Eggs (for structure)
  • Greek yogurt (for a soft, fluffy texture)
  • Melted coconut oil (for richness)
  • Maple syrup or coconut sugar (for natural sweetness)
  • Vanilla extract (for depth of flavor)
